Paz’s pot is on. The meat truck skipped. Last week’s trial came back on the plates. That is the job this lesson is about.

Protein on a plate is not the same as protein in a sack. A cook still has to season it, name it, and serve it to a line that remembers cardboard. Tuesday is the meal a lot of Fenn counts on, and the line does not care where the protein came from as long as it tastes like dinner.
