Honest limits
Last week’s cardboard came back on the plates. Taste and habit are not a rounding error. A line that walks out once stays home for a season.
A sack is not a recipe. Someone has to cook it, and cook it twice before the crowd tastes it once. The fungus protein that comes out of a fermenter needs salt, fat, and time in the pot, the same as anything else Paz has ever made taste like dinner.
Names matter too. In March 2026 the European Union agreed to reserve words like “steak” and “burger” for meat. Whatever Paz cooks, she has to call it something people will say out loud and order again.
Fermentation tanks use power. Cultivated meat is still expensive. This lesson is not about living longer, banning farms, or growing anything in a garage.

The limits are the recipe’s edges, not a reason to keep the sack sealed.
The tempting mistake is to believe that if it is healthy it will be eaten.
That is what lets you invent the plate.
