What a kitchen can cook in 2026
Plant proteins are on supermarket shelves and in wholesale sacks. A cook can buy them today.
Biomass fermentation is scaling. In September 2026 one producer raised money to push its fungus protein toward the price of ground beef, and an industry count found more than 160 companies working on fermentation in 2025. Fungus protein is easier to find than precision-made ingredients, which mostly hide inside other products.
Cultivated meat reached its first US shop shelf in 2025, is served in a handful of restaurants, and has a large food-grade tank line in Sydney. Funding fell in 2025. Europe still does not sell it as food.

For a civic kitchen in 2026 the honest Tuesday paths are plants and fungus protein. Fenn should pick the one the line will eat this week.
The tempting mistake is to plan a menu around a product that exists in three restaurants.
That is what lets you hear the limits before the plates come back.
